Christmas Baking

Get into the Christmas spirit by baking these fabulous Cinnamon Cookies!

 Ingredients

  • 200g butter, softened
  • 140g light soft brown sugar
  • 1 egg
  • 350g plain flour
  • 1 tsp cinnamon
  • 1 tsp mixed spice
Method
  1. Preheat the oven to 180°C/gas mark 4. In a bowl beat the butter and sugar until light and fluffy. Gradually beat in the egg yolk, then stir in the flour, cinnamon and mixed spice, bringing the mixture together to form a soft dough.
  2. Lightly flour a clean work surface and roll the dough out to 3mm thick. Cut into shapes and transfer to a baking tray lined with non-stick baking parchment.
  3. Bake for 10-12 minutes, or until the biscuits have just turned golden. Cool on the tray for 5 minutes then transfer to a wire rack to cool completely.
  4. When cool, store in an airtight container for up to 5 days, then decorate just before packaging into gift bags or boxes.

Tip: Decorate with simple icing – just icing sugar and water, and food colouring if you like. Get creative with silver balls, hundreds and thousands, currants, sweets, flaked almonds and/or edible glitter. Or, keep it simple and dust with icing sugar.
